After several readers chided me for the absence of Blog entries over the past weeks I finally began thinking about doing one to get things going again. I cranked up the computer and went to the blog site to check things out and refresh my memory. What I found was a blog I previously created, but had no recollection of ever sending. That’s great I thought, I can send something out and not have to do any work. Wrote a little intro paragraph and sent it on its merry way. It quickly resulted in several complimentary responses. Now it was time to start thinking about an encore.
Things were going fine until someone wrote back that they had made the Salmon recipe and really enjoyed it. This was only a few minutes after I had posted it. No way they could they have made it that quickly. An investigation was in order. Checking things out I discovered that I had posted this blog on March 30th. I firmly believe that I have not contracted the dreaded Covid-19 virus during this trying time, but something has definitely happened to my brain during these past months of isolation. How in heavens name could I have forgotten that?
With this now damaged old brain it’s going to be even more difficult to come up with any outstanding new entries. The damage might have occurred from lack of use. When all this stuff first started my children insisted that Marge and I not venture out of the house, period! We’ve behaved during this time and stayed safely at home. Thankfully our needs have been taken care of by our helpful daughters. My nearly daily trips to the grocery store unfortunately were discontinued. Our granddaughter Rachel has been kind enough to take care of this habit of mine and has been making a weekly trip in my place.
Today, however, has been eventful. Rachel and I went shopping together so she could teach me some of the new procedures created for virus protection at the supermarkets. Rachel, a beautician, will be going back to work since the shops have now reopened. I was so surprised that one of the major changes was made to protect us elderly from getting lost and not finding our way home. They now have arrows on the floor to show us where we should be going. I realized that having a personal shopper was really neat…..I’m going to miss her. Let’s hope there’s still enough healthy brain left on me to make the future entries interesting for you.
Recipe Time: Here’s one that I borrowed from Paula Dean. Simple to make, extremely delicious and terribly fattening. I’ve made this many times and it was always cobbled up voraciously by everyone having it.
Corn Casserole
One 15-1/4 oz. can whole kernel corn drained
One 14-1/4 oz. can cream style corn
One 8 oz. package Jiffy corn muffin mix
1 cup sour cream
1/2 cup (1 stick) melted butter
In large bowl, stir together all ingredients. Pour into a greased casserole and bake at 350 degrees for 45-60 minute, or until golden brown.
